Inter / ThickPeel · Dice

Intermediate juice consistency with thicker pericarp wall. Designed for peel and dice operations where fruit integrity and appearance matter. Higher Brix supports premium quality grades.

InterPeel · Dice

Pure intermediate class — the largest fruit in the lineup. Controlled vine type with exceptional Brix and color metrics. Ideal for premium whole-peel canning operations.

ThickPaste

Maximum wall thickness and low Bostwick consistency — optimized for paste yield. These varieties convert more fruit weight into usable paste per ton. High lycopene supports color grade premiums.

Quality Metrics Explained

What the numbers mean for processing operations and finished product quality.

Brix

Soluble solids content (sugars, acids, lycopene precursors). Higher Brix = more usable product per ton. California processing tomato average: 4.8–5.2%. Orsetti lineup: 4.54–5.31%.

Wall Thickness (mm)

Pericarp thickness. More wall = less water = higher paste yield per ton. Critical for paste operations. Every 0.1mm difference matters at scale. Lineup range: 5.97–6.37mm.

Juice Bostwick (J.Bost.)

USDA method measuring juice flow rate in cm/30 sec. Lower number = thicker juice = better paste viscosity. A reading below 12 indicates premium paste consistency. Lineup range: 11.36–14.23.

Lycopene (mg/100g)

Red carotenoid pigment. Determines color grade and nutritional value. Higher lycopene supports premium USDA tomato color grades. BOS 6848 leads the lineup at 10.24 mg/100g.

Serum Viscosity

Lab measure of the thick fraction. Complements Bostwick at industrial scale. Higher serum viscosity supports better texture in finished paste.

a/b Color Ratio

USDA Lab color measurement. Higher ratio = more red, less yellow. Critical for premium paste and sauce grades. Lineup range: 1.91–2.02 (where available).

What is the difference between Inter, Thick, and Inter/Thick classes?

Processing class describes juice consistency and intended use. Inter (Intermediate) varieties produce a juice suitable for peel and dice operations. Thick varieties have thicker walls and lower Bostwick readings, optimizing paste yield per ton — the standard for tomato paste and puree production. Inter/Thick varieties balance both characteristics for flexible processing.

What disease resistance do Orsetti processing tomato varieties carry?

Most varieties carry VFFFNSW resistance — Verticillium wilt, Fusarium wilt races 1, 2 and 3, Nematodes, Stemphylium, and crown Wilt. BOS 811 additionally carries tolerance to EFH (early fusarium) and FSSC races 3 and 4, making it the recommended variety for fields with documented crown rot pressure.
