Processing Classes
Varieties are grouped by juice consistency and intended processing use.
Intermediate juice consistency with thicker pericarp wall. Designed for peel and dice operations where fruit integrity and appearance matter.
Pure intermediate class — the largest fruit in the lineup. Controlled vine type with exceptional quality and color profile. Ideal for premium whole-peel canning operations.
Maximum wall thickness and thick paste consistency — optimized for paste yield. These varieties convert more fruit weight into usable paste per ton. Deep red pigmentation supports color grade premiums.

Inter / Thick Class

Outstanding color profile and deep pigmentation. Mold tolerance and extended field holding. Only Race 2 variety in the lineup — suited for fields with established Fusarium race 2 pressure.

Strong vine with high yield potential and broad adaptability. High soluble solids in the Inter/Thick class.

Very high yield potential. Thickest paste consistency in the lineup. Outstanding color and firmness.

Large controlled vine. Full-season thick type. Very high yield potential. Excellent paste characteristics paired with BOS 7704.
BOS 6848
Outstanding color profile and deep red pigmentation. Thickest wall type in the lineup. Preferred for premium paste color grades.

Quality Metrics Explained
What the numbers mean for processing operations and finished product quality.
Brix
Soluble solids content — sugars, acids, and pigment precursors. Higher Brix means more usable product per ton. A key driver of finished product yield and quality grade.
Wall Thickness
Pericarp thickness. More wall means less water content and higher paste yield per ton. Critical for paste operations — small differences across a variety lineup matter at processing scale.
Juice Bostwick
USDA method measuring juice flow rate. Lower number means thicker juice and better paste viscosity. The standard measure of paste consistency across processing varieties.
Lycopene
Red carotenoid pigment that determines color grade and nutritional value. Higher lycopene supports premium USDA tomato color grades in finished paste and sauce.
Serum Viscosity
Lab measure of the thick fraction. Complements Bostwick at industrial scale. Higher serum viscosity supports better texture in finished paste.
a/b Color Ratio
USDA Lab color measurement. Higher ratio means more red, less yellow. Critical for premium paste and sauce grades.
